Chickpea Galettes with Sweet and Sour Eggplant!

For 5 small chickpea pancakes:

250 g chickpea flour
1 pinch of pepper
1 ½ tablespoons olive oil
1 teaspoon of sea salt

Preparation:

Mix the chickpea flour, olive oil, pepper, and salt well with 400 ml of water and leave to stand for 30 minutes.
Add a little olive oil to a hot pan and fry five medium-sized chickpea patties. One at a time, on both sides for about 3 minutes (until the edges come away easily from the pan) over medium heat until golden brown.
