Nouilles soba aux légumes et yuzu de Petit Ventre Heureux

Ingredients

  • 3 tablespoons yuzu or lemon juice
  • 3 tablespoons brown rice vinegar
  • 2 teaspoons grated fresh ginger
  • 180g dry soba noodles
  • 1 cup carrots, cut into matchsticks
  • 1 cup red or yellow peppers, cut into matchsticks
  • ½ bunch Japanese chives (garlic chives) or ordinary chives, cut into small rings
  • 1.5L Pheonix Potion plus ¼ cup
  • 3 tablespoons olive oil
  • 1 pinch turmeric
  • 1 grind of pepper
  • 1 pinch salt

Preparation

  • French dressing: whisk together the turmeric, olive oil, pepper, ginger, salt, yuzu or lemon juice, vinegar and ¼ cup of Phoenix Potion in a large bowl.
  • Put the boiling Potion in a saucepan and cook the noodles according to the instructions on the packaging.
  • Add the carrots, pepper and chives during the last 5 minutes of cooking.
  • Drain
  • Transfer the noodle mixture to the bowl with the dressing.
  • Toss to coat
  • Serve hot or warm
  • If the noodles seem dry: toss with 1 or 2 tablespoons of Potion.
