Scrambled tofu for brunch?
Scrambled tofu for a spring brunch!
Preparation time: 20 minutes
Quantity: 4 servings
A delicious alternative to scrambled eggs.
A balanced breakfast of warming and refreshing ingredients in attractive colors for an inspired start to the day and a vibrant spring.
1 green onion (with leaves)
5 pieces of dried tomatoes
1 teaspoon of coarse salt
3 tablespoons of Energy Potion (here we used the Dragon)
1 tablespoon of soy sauce
2 tablespoons of olive oil
5 basil leaves
Chop the onion including the green part.
Brush and chop the mushrooms.
Cut the tomatoes into julienne strips.
Wash the basil leaves and tear them into small pieces.
Heat the olive oil in a pan and fry the onion for 3 minutes until translucent.
Add the mushrooms and tomatoes and fry for another 3 minutes.
Add pepper, cumin, and salt.
Crumble the tofu by hand and sprinkle over the top.
Fry for another minute.
Deglaze with the potion and soy sauce.
Add lemon juice, brewer’s yeast, turmeric, paprika and oat milk.
Continue to stir for 2 minutes over medium heat.
Remove from heat and sprinkle with basil.
